Ingredients
185g almond flour or blanched almonds (available in handy packs from Tesco, Lidl or Aldi)
30g coconut flour (from your local health food shop)
1/2 teaspoon sea salt
1/2 teaspoon baking soda
1 egg
1 tablespoon vanilla extract
107g melted butter or coconut oil (500ml tubs available at Tesco from just €1.99!)
150g melted raw or set honey
135g plain chocolate chips
Method
- Preheat your oven to 177°C
- In a mixing bowl, combine flours, sea salt and baking soda
- In a smaller bowl, combine egg, vanilla extract, coconut oil and honey and mix well
- Add your wet ingredients, ensuring you incorporate all of the ingredients
- Fold in your chocolate chips
- Using a tablespoon, spoon the batter onto a parchment lined baking tray, leaving room for the cookies to spread while baking
- Place in the oven and bake for 13-15 minutes or until done
- Remove and leave on a cooling rack
